
豆醬蝦
豆瓣醬本質很咸。所以,當用豆瓣醬做菜時,建議加入酸梅醬和糖來綜合豆瓣醬的鹹度。我們家的口味比例是2:1:0.5 (豆瓣醬:酸梅醬:糖),你們家又是什麼比例的?
Ingredients
200 克 大蝦 (8隻 )
50 克 幼姜 (去衣剁碎)
4 粒 小蔥頭 (去衣剁碎)
4 瓣 蒜頭 (去衣剁碎)
3 條 小辣椒 (切小粒)
2 湯匙 豆瓣醬
1 湯匙 酸梅醬
1 茶匙 糖
少許 水
3 湯匙 油
少許 蔥
Instructions
準備工作:
把蝦只修剪,去腸泥,洗凈,瀝干
做法:
燒熱鍋,下油待熱
加入蝦煎至變色,翻另一面再煎至全只呈粉紅色,起鍋待用
倒入薑末,蒜末,蔥頭,小辣椒, 爆香炒勻
下豆瓣醬和酸梅醬,炒勻
加水和糖調味(也可自行加入醬油,跟自己喜好)
倒入蝦和蔥花, 快炒5秒
熄火,上碟,灑上蔥花,完成
Fried Prawn with Minced Bean Paste
Minced bean paste can be very salty, that’s why we suggest mixing with sour plum sauce and sugar to balance it out, what do you think?
Ingredients
200 g large prawn (8 pc)
50 g ginger (peel off skin, mince it)
4 pc shallot (peel off skin, mince it)
4 clove garlic (peel off skin, mince it)
3 pc cili padi (slice it)
2 tbsp minced bean paste
1 tbsp sour plum sauce
1 tsp sugar
Some water
3 tbsp oil
Some spring onion
Instructions
Preparations:
Trim off prawn’s legs and feelers, devein them, rinse and drain.
Steps:
Heat up oil in a pan.
Fry the prawns on both sides until cooked, set aside.
Add in ginger, garlic, shallot, chilli padi, saute until fragrant.
Pour in minced bean paste and sour plum sauce, fry evenly.
Add in water and sugar for seasoning. (Feel free to add soy sauce to your own preference)
Add in prawn and spring onion, fry quickly for 5 seconds.
Dish up and dress it with spring onion, enjoy!
